Absinthe remains a spirit of intrigue with all the bohemian drama of the Belle Epoch era. Its holy trinity of wormwood, anise and fennel are rounded by fresh green botanicals that deliver an aperitif with a spicy and floral perfume. Mossy green in glass (as per the bottle image here), with a very herbaceous nose - like a big crop of freshly watered mint growing in well watered soil. And then there is the aroma of black salty Dutch/Danish licorice.
The lingering sense of the forbidden, plus the ceremony of the spoon, sugar cube and water continues to delight and entice those of us who love Absinthe’s botanical complexity as well as its long history as muse to the world’s greatest artists. Part of the pleasure of the Absinthe experience is the serving ritual, so each hand numbered bottle comes with sugar cubes and an Absinthe spoon.
Once diluted with sugary water, our Absinthe is like a cool sweet mint tea, with the bittering wormwood acting like a leafy base note and the mint and anise refreshing and intriguing. Warming all the way down to the toes, we don't recommend drinking it neat. Always drink diluted with the sugary water as it lifts the aromas and brings the spirit alcohol/volume down to an enjoyable level.

A journey in three partsJoin our Whisky program
The journey will begin with a 700mL bottle of our Maiden New Make, a Crystal Whisky Tumbler, a Plinth made of timber reclaimed from the Adelaide Hills bushfires of 2020 by artist Oakey, and a hand numbered, letter pressed certificate of authentication visually created by artist Amy Joy Watson - delivered to your door.
Rose will lead you in a guided tasting of the New Make that also sets the stage for our journey together.
In approximately 18 - 24 months, when the maker decides the New Make is ready to share, you’ll receive a 200mL bottle as pictured above, before joining Rose in a tasting that explores the development of our whisky’s flavour, learning more about how the oak is shaping the final whisky.
You’ll receive quarterly updates, invitations to exclusive online seminars and whisky focussed cocktail classes.
When the whisky is ready for release - likely to be another twelve to eighteen months along - you’ll receive one precious 500mL bottle of Full Circle Maiden Whisky. We’ll celebrate the culmination of the journey in our final guided tasting with Rose, where our rich, matured whisky finally passes from our hands to yours.
Our concluding event will again be offered online, and for those who can join us, we will provide the option of raising whisky tumblers face to face in Adelaide
Maiden New Make Tasting Notes
700mL and 50% ABV
300 bottle limited release
After ageing for one month in selected Bourbon, Muscat and Apera Oak Barrels, this unique malt spirit shows the promise of the beautiful, rare whisky to come. Our Maiden New Make has been thieved from barrels containing this unique spirit, that has already begun to show notes of citrus, fresh-cut hay and bread dough on the nose. Sweet apricot nectar, Christmas cake spice, Gingernut biscuit, and a slight toastiness linger on the palate. Still full of youth, it has begun the journey of a rich, ageing spirit. In your guided tasting, Rose will have you tasting it neat, over a large cube of ice, and with selections of fresh citrus garnishes. She’ll also recommend how and where she uses it in place of any fine whisky in a number of classic whisky-based cocktails.
Malt Whisky creation traditionally starts with grain that is malted, mashed and fermented to create a beer wash. The wash is distilled into a spirit known as new make, which must age in barrel for at least two years to earn the title of whisky. A beer wash is akin to beer, but not the same. A finished beer is a more refined, complete beverage – something with carefully calibrated flavour. Beer wash is a raw material, with malt and yeast chosen to create a unique whisky. For Full Circle’s first whisky, Rose used Sparkke’s highly awarded Pale Ale in place of a beer wash. Distilling the hop-heavy brew twice, Rose had the opportunity to create a unique new make that is delicious now, and also full of promise. The fine oak barrels chosen (an ex-Bourbon barrel, an ex-Apera barrel and an ex-Muscat barrel) to support the aging process, held the Maiden New Make for 30 days before bottling.
